Ingredients

  • 3/4 cup vegetable oil
  • 1 cup flour
  • 1/4 cup tomato paste
  • 1 medium onion, diced
  • 1 cup assorted colored bell peppers, diced
  • 3 garlic cloves, minced
  • 4 cups chicken stock
  • 2 cups brewed Smooth Operator (unflavored coffee is best)
  • 1 cup tomato puree
  • 2 tablespoons Flippin' the Bird Seasoning, divided
  • 1 pound chicken breast, baked and shredded
  • 1 pound Andouille sausage, cut into rounds
  • 1 tablespoon cornstarch
  • 2 cups cooked rice, for serving

Directions

  1. Preheat oven to 350°F.
  2. Pound out chicken breast and liberally season with 1 tablespoon of Flippin' the Bird Seasoning.
  3. Place chicken on a baking sheet and bake until an internal temperature of 165°F is reached (about 20-30 minutes).
  4. Let sit for 10 minutes before shredding.
  5. In a large, heavy-bottomed stock pot over medium heat, heat vegetable oil.
  6. Once the oil is shimmering and hot, add the flour to make a roux.
  7. Cook, stirring continuously, over medium-low heat until the roux turns a medium/dark brown color (about 8-10 minutes). Stir constantly to prevent burning.
  8. Once the roux is browned, add in tomato paste and stir until dissolved.
  9. Add diced onion, peppers, and garlic, cooking for 2-3 more minutes while stirring.
  10. Pour in chicken stock, brewed Smooth Operator coffee, and tomato puree, stirring to combine.
  11. Increase heat slightly and bring mixture to a simmer for 3-5 minutes, allowing the sauce to start thickening.
  12. Once slightly thickened, add shredded chicken, Andouille sausage, remaining Flippin' the Bird Seasoning, and cornstarch.
  13. Stir well until fully incorporated.
  14. Let simmer on low heat for 30 minutes to 1 hour, stirring frequently.
  15. While the gumbo is simmering, prepare your rice according to package directions.
