Because it's robust and malty, black tea is incredibly forgiving and practically begs for a splash of milk and a little sweetener. Here is how to brew a cup that tastes like a cozy café, right in your own kitchen.

  • The Ratio: 1–2 tsp (2–3 g) of loose tea per 8 oz cup. (Want it stronger? Add more tea leaves, not more time!)
  • The Water: 212°F / 100°C. (Bring it to a full, angry, rolling boil. Black tea needs high heat to extract the flavor.)
  • The Time: 3–5 minutes. (3 minutes for a lighter, smoother cup; 5 minutes if you plan to add milk and need the tea flavor to punch through.)
