Ingredients

  • 1/8 cup olive oil (divided)
  • 1 small onion, finely diced
  • ½ cup shredded carrot
  • 1 celery rib, finely diced
  • 2 oz. pancetta or bacon, diced
  • ½ lb. ground beef
  • ¼ lb. ground pork
  • ¾ cup brewed Sumatra Mandheling Coffee
  • 14 oz. stewed tomatoes
  • 1 tsp. Austin Steak Rub
  • Coarse sea salt and Pennsylvania pepper, to taste
  • 1/8 cup heavy cream
  • 1 lb. pappardelle noodles
  • Freshly grated Parmesan (for serving)

Directions

  1. Sauté the Vegetables & Pancetta:
  2. Heat 1 tbsp. olive oil in a large saucepan over medium heat.Add onion, carrot, celery, and pancetta (or bacon) and cook, stirring occasionally, until soft and fragrant (about 6 minutes).Transfer veggies to a bowl and set aside.
  3. Brown the Meat:
  4. Add 1 tbsp. olive oil to the saucepan and heat until shimmering.Add ground beef and pork and cook over medium-high heat, breaking up the meat with a spatula until just barely pink (about 5 minutes).
  5. Build the Flavor:
  6. Return the vegetable mixture to the pan.
  7. Stir in Austin Steak Rub and cook over high heat for 1 minute until fragrant.
  8. Pour in the brewed Sumatra Mandheling Coffee, stirring occasionally, and let it reduce for about 6 minutes.
  9. Simmer the Sauce:
  10. Stir in the stewed tomatoes, season with coarse sea salt and Pennsylvania pepper, and bring to a gentle boil over high heat.Reduce heat to low and simmer uncovered for 45 minutes, stirring occasionally.
  11. Finish with Cream:
  12. Stir in the heavy cream and let the sauce heat through.
  13. Cook the Pasta:
  14. In a large pot of boiling, heavily salted water, cook the pappardelle noodles until al dente.Drain well and toss with the Bolognese sauce.
