Coffee shops have been putting cold brew sodas on their menus and charging $8 for them. The format is simple: cold brew as the base, sparkling water, whatever flavor you want. Any Java Momma coffee works — flavored ones especially, because the flavor comes through cleaner and sweeter without heat. Here's what you need to know before you start building.
Why cold brew works in soda (and espresso tonics sometimes don't)
Good crema on a freshly pulled espresso shot is a quality signal — it means the beans are fresh and the extraction is right. What most people don't know is that crema forms because of CO2 trapped inside the bean during roasting. Hot water under pressure releases that CO2. It's literally why fresh espresso smells the way it does when you pull a shot.
That same CO2 is what causes problems in espresso tonics. The CO2 in the espresso reacts with the carbonation in the tonic water and creates a metallic, bitter edge that's hard to cover up — even with good ingredients. Cafés add syrups to mask it. It helps. It doesn't fix it. If you tried an espresso tonic and didn't love it, that's why. It wasn't you.
Cold brew skips heat entirely. No heat means no CO2 release — the flavor extracts slowly in cold water over 12–24 hours, and the result is smoother, naturally sweeter, and less bitter. When you add sparkling water, there's nothing fighting the carbonation. Clean fizz, clean flavor, every time.
