Pour Over
What is it?
A ceramic, glass or plastic cone, with a paper or metal filter. This brewer comes in various shapes and sizes. (The recipe below is for the pour over cones and paper filters).

It's gentle, which allows the more delicate flavors of the coffee to shine through

What you need:
Pour over cone
Pour over coffee filter papers
Kettle, scale and timer

Coffee
Recipe:
Makes two servings
1 ounce (30 grams) coffee roasted for filter
17 ounces (500 grams) water
Total brew time: 3 minutes
Grind size: medium (finer than a plunger grind and coarser than espresso grind)
Start with at least 4 cups (1 litre) of fresh water and bring to the boil. While waiting for the water to boil, fold the filter paper along each seam, then open it and place inside the cone. Weigh and grind your coffee if needed.
Place the cone filter paper on your jug. Pour some boiled water through to rinse the paper and warm the cone and jug. Once drained through, empty water for the jug into the sink.
Put your ground coffee in the filter-lined cone. Place the cone on top of your jug, and then place the entire set up on the scales and tare to zero.
Start your timer and pour just enough boiling water to cover all the coffee, then leave the coffee to 'bloom' for about 30 seconds. You can bloom with about twice the weight of the coffee. This bloom period helps coffee to de-gas and rearrange itself into an even bed, allowing for an even extraction.
Pour the rest of your water slowly, in a circular motion. Aim to add all your water just after 2 minutes; your brew should finish trickling through by approximately 3 minutes.
Give the brewed coffee a quick stir, and then pour and enjoy!
Moka Pot
What is it?
Known as the Moka Pot, this brewing method is an oldie but a goodie. The stovetop brewer is an aluminium pot with a bakelite handle.

Produces a heavy bodied cup of coffee
For almost a century this brewer was a more economical alternative to espresso
It's an easy way to brew an espresso-like coffee at home if you don't have an espresso machine
What you need:
Stovetop coffee brewer
Kettle and scales
Recipe:
Serves 4-6 people
1/2 ounce (17 grams) coffee roasted for espresso
4 1/2 ounces (130 grams) water
Total brew time: 2-3 minutes
Grind size: a bit coarser than espresso grind
Bring at least 2 cups (1/2 litre) of water to boil, and grind your coffee. Rinse the bottom and top of the stovetop brewer to ensure it's clean and warmed.
Fill the base of the pot with boiling water, right up to the brass valve. Overfilling the base can cause the water to overheat and burn the coffee.
Fill the basket with ground coffee, give it a gentle tap to settle it, then cleanly level it off, leaving a flat but full basket of coffee. Carefully place the basket in the base, and screw on the top. The base will be hot, so use a towel and be careful!
Place the stoveotp brewer over low hear (either gas or electric will work fine) and wait until you hear gurgling sounds from the top, or until you see coffee coming from the stem. Remove for heat, and pour.
Aeropress
What is it?
A relative newcomer to the brewing scene, the Aeropress was invented in 2005 by Alan Adler. It consists of two lightweight cylinders and a filter.

What you need:
Aeropress coffee brewer
Aeropress coffee filter papers
Kettle, scale and timer
A cup or jug to brew into
Coffee
Recipe:
Makes one serving
1/2 ounce (15 grams) coffee roasted for filter
7 ounces (200 grams) water
Total brew time: 2 minutes
Grind size: medium (a little finer than pour over grind)
Bring at least 2 cups of fresh water (1/2 litre) to the boil. While waiting for the water to boil, place the filter paper in the filter holder and attach it to the bottom of the Aeropress chamber.
Place the Aeropress on top of your cup or jug, and rinse with hot water, discarding the water from the cup once it's filtered through. This heats up your Aeropress and cup, and rinses the paper at the same time.
Pour the ground coffee into the bottom of the Aeropress chamber. Place the set-up, with the cup beneath, on a set of scales and tare to zero.
Add half the boiled water to the ground coffee and start your timer. Carefully place the plunger part in the top of the Aeropress. (This will create some suction and will stop the coffee dripping through the filter.) After 1 minute, carefully remove the plunger and give the brew a good stir. Replace the top part of the plunger and let it brew for another minute.
Gently and slowly press the plunger down until the coffee brew is completely pushed through the paper filter.
Give the brew a stir, and then enjoy!
French Press
What is it?
The French Press is one of the simplest (and oldest) brew methods. It is composed of a cylinder - often made of glass - and a metal stem and mesh filter.

Great for brewing for a group of people
Easy to produce consistent results
Many people already have one at home!
