What You'll Need

For the Cold Brew Base:

  • 6 oz Strawberry Shortcake coffee, brewed strong and chilled (or cold brew concentrate, diluted 1:1)
  • Handful of ice

For the Strawberry Cream Cold Foam:

  • 3 tbsp heavy cream
  • 1 tbsp milk
  • 1 tsp vanilla extract
  • 1 tsp strawberry jam or 1 tsp freeze-dried strawberry powder
  • 1 tsp sugar (or sweetener of choice)

To Finish:

  • 2–3 shortbread cookies, crumbled (Walkers or any plain shortbread)

How To Make It

  1. Brew strong, chill well. Brew your Strawberry Shortcake coffee at double strength and let it cool completely — or use cold brew concentrate diluted 1:1 with cold water. Do not skip the chilling step or you'll melt the foam on contact.
  2. Make the cold foam. Combine heavy cream, milk, vanilla, strawberry jam or powder, and sugar in a small jar or frothing pitcher. Froth with a handheld frother for 20–25 seconds until thick, pourable, and pale pink. It won't go stiff — smooth and pourable is exactly right.
  3. Build the glass. Fill a tall glass with ice. Pour the chilled coffee over.
  4. Add the foam. Spoon or pour the strawberry cold foam over the top of the coffee. It should sit as a distinct layer — don't stir.
  5. Finish with cookies. Crumble the shortbread over the foam. Serve immediately — the cookies soften fast and that's actually the best part.

Swaps & Permission Slips

  • No shortbread? Vanilla wafers, graham crackers, or any plain butter cookie work. The point is the crumble texture and a hint of buttery vanilla — not the specific cookie.
  • No freeze-dried strawberry powder? A small spoonful of good strawberry jam is the easier path anyway. A little goes a long way in the foam.
  • Watching carbs? Swap sugar for allulose in the cold foam and skip the cookie crumble, or use a low-carb shortbread. The strawberry foam and coffee are the stars — the cookie is a bonus.
