Whether you're grinding beans at home or using our seasonal cold brew pods, this guide walks you through foolproof ratios, steeping times, and quick fixes for every flavor issue. From sour to bitter to muddy, you'll know exactly how to adjust ā and end up with smooth, cafĆ©-quality cold brew every time.

TL;DR
- Regular method (beans/ground): Make concentrate at 1:4 coffee:water. That's 7 oz coffee (200 g) to 27 fl oz water (800 mL), coarse grind, 12ā18 hr in the fridge; cut 1:2ā3 with water/milk to serve.
- Pods (50 g ā 1.8 oz, seasonal): Ready-to-drink: 1 pod : 16ā17 fl oz water (475ā500 mL). Concentrate: 2 pods : 13½ fl oz water (400 mL), then cut 1:2ā3 in the cup.
- Fixes: Sour ā slightly finer grind or longer steep. Bitter/muddy ā coarser grind or shorter steep + paper filter polish.
Pods are a seasonal convenience. The regular method works year-round with any of our coffees.
Why Cold Brew Is Different
Hot coffee and cold brew aren't the same process slowed down ā they're genuinely different extractions. Cold water pulls flavor out of coffee grounds far less efficiently than hot water does, roughly 60ā70% as efficient at the same contact time. That gap is why cold brew ratios look nothing like drip ratios, and why the steep time is measured in hours instead of minutes.
It's also why roast selection isn't as simple as "light and medium are better for cold brew" ā a claim you'll see repeated a lot. The truth is more useful than that: roast choice depends on what you want the finished drink to taste like, not on some roasts being objectively superior for the method.
Want low-acid and smooth? Reach for a darker roast, made into concentrate and cut with milk.
Want bright and juicy? A light or medium single origin, brewed closer to ready-to-drink strength, lets that character come through.
Want chocolatey and sweet? Medium to medium-dark roasts, especially dessert-leaning flavors, hold up beautifully cold.
There's no wrong answer here ā just a mismatch between roast and goal if you don't think about it first.
2-Minute "Do This Now" Recipe (Concentrate, ~1 Qt)
Measure 7 oz coarsely ground coffee (200 g; texture = breadcrumbs).
Add 27 fl oz cold, filtered water (800 mL) to a large jar or brewer.
Optional bloom: pour ā cup hot water (~3 fl oz / 100 mL) over grounds for 30 sec, then add the rest of the cold water.
Stir, cover, and refrigerate 14ā16 hr.
Strain (fine mesh; for extra clarity, pass once through a rinsed paper filter).
Serve concentrate 1:2ā3 with water or milk (e.g., ā cup concentrate + ā ā1 cup water/milk over ice).
Store concentrate 7ā10 days chilled (brightest days 1ā4).

No scale? Cheats: 1 cup whole beans ā 3 oz (85 g); 1 heaping Tbsp ground ā ¼ oz (7ā8 g). For ~1 qt concentrate use 3¼ā3½ cups water and ~28 heaping Tbsp ground coffee.

Decision Tree: Fix It Fast
Sour / Lemony
- Grind one notch finer or steep +2ā4 hr.
- Check dose; move toward 1:4 if under-dosed.
Bitter / Harsh
- Grind coarser or shorten to ~12 hr.
- Cut stronger concentrate more (try 1:3).
Muddy / Flat
- Polish once through a paper/cloth filter.
- Let concentrate rest 12ā24 hr, then decant.
Too Weak / Too Strong
- Weak: cut less (1:2) or dose +10% next batch.
- Strong: cut more (1:3ā4) or brew at 1:5 next time.

Workflows that Save You Time

- Batch once, sip all week: Brew 1.5ā2 qt concentrate (e.g., 14 oz coffee ā 54 fl oz water / 400 g ā 1.6 L). Label date/ratio. Morning: ā cup conc + ā ā1 cup water/milk over ice.
- Zero-dilution iced latte: Freeze coffee ice cubes from concentrate; pour conc + milk over cubes.

Quick Add-Ins
Vanilla Sweet Cream (keeps 5 days)
1 cup milk of choice, ½ cup cream (or full-fat oat), 2 Tbsp sugar (or 1ā2 Tbsp maple), 1 tsp vanilla. Shake, chill. Add 2ā4 Tbsp per cup; top with cold brew.
10-Second Mocha
1 tsp cocoa + 1ā2 tsp sugar (or syrup). Splash hot water to dissolve. Add ice, milk, and cold brew.
No-Cook Pumpkin Spice
1 Tbsp pumpkin purĆ©e + 1ā2 tsp maple + ¼ tsp pumpkin spice. Whisk with milk; pour cold brew over ice.

Health & Caffeine Notes
Cold brew often feels gentler than hot drip. Caffeine depends on dose/ratio; a 10ā12 oz serving cut from concentrate is similar to a strong drip coffee. If sensitive, enjoy earlier in the day and cut more toward 1:3ā4.
