Ingredients

  • 1 lb. ground Italian sausage
  • 1 medium onion, finely diced
  • 3 garlic cloves, minced
  • 1 can cannellini beans, drained and rinsed
  • 1–2 Tbsp Corn on the Cob Seasoning, divided
  • 2 ½ cups chicken stock
  • 1 ½ cups brewed Java Momma White Elephant Coffee
  • 1 (1 lb.) package gnocchi
  • 3–4 cups fresh spinach
  • 1 cup heavy cream

Optional Toppings:

  • Freshly grated Parmesan cheese
  • Fresh chopped parsley

Method

  1. In a large saucepan, cook sausage and onion over medium heat for 8–10 minutes, breaking up sausage until browned and onion is softened.
  2. Add garlic, 1 Tbsp Corn on the Cob Seasoning, and beans. Cook 2 minutes, stirring often.
  3. Stir in chicken stock and brewed coffee. Bring to a gentle simmer.
  4. Add gnocchi, spinach, and heavy cream. Stir to combine. Cook 2–3 minutes until gnocchi float to the top.
