Ingredients
- 1 lb. ground Italian sausage
- 1 medium onion, finely diced
- 3 garlic cloves, minced
- 1 can cannellini beans, drained and rinsed
- 1–2 Tbsp Corn on the Cob Seasoning, divided
- 2 ½ cups chicken stock
- 1 ½ cups brewed Java Momma White Elephant Coffee
- 1 (1 lb.) package gnocchi
- 3–4 cups fresh spinach
- 1 cup heavy cream
Optional Toppings:
- Freshly grated Parmesan cheese
- Fresh chopped parsley
Method
- In a large saucepan, cook sausage and onion over medium heat for 8–10 minutes, breaking up sausage until browned and onion is softened.
- Add garlic, 1 Tbsp Corn on the Cob Seasoning, and beans. Cook 2 minutes, stirring often.
