Ingredients

  • 1 box Pound Cake Mix (16 oz)
  • ½ stick butter, softened
  • 2 eggs
  • ⅔ cup milk

For the Pumpkin Spice Cream Cheese Frosting:

  • 8 oz cream cheese, room temperature
  • ½ cup butter, room temperature
  • 1 ¾ cups confectioners’ sugar
  • 2 Tbsp Pumpkin Pie Finishing Sugar
  • 1 Tbsp maple syrup

Optional Garnish:

  • Chopped pecans

Method

  1. Preheat oven to 350°F. Line a 11x17 sheet pan with parchment paper.
  2. Spice Cake: Mix spice cake mix, eggs, oil, and brewed coffee. Spread batter evenly in sheet pan. Bake 20–22 minutes until a toothpick comes out clean. Cool completely.
  3. Prepare pound cake batter according to package directions.
  4. Using a pumpkin-shaped cookie cutter, cut cooled spice cake into pumpkin shapes. Trim bottoms so they stand flat.
  5. Butter and flour a loaf pan, then line with parchment. Stand pumpkin shapes upright in pan. Carefully pour pound cake batter around and over pumpkins. Bake 45–50 minutes, until a toothpick inserted comes out clean. Cool fully.
  6. Frosting: Beat cream cheese and butter until smooth. Add Pumpkin Pie Finishing Sugar and maple syrup. Slowly mix in confectioners’ sugar until fluffy and creamy.
  7. Frost cooled cake. Garnish with pecans and Pumpkin Spice Finishing Sugar, if desired.

Ingredients

  • For the Spice Cake:
  • Spice Cake Mix, 15.25 oz
  • 3 eggs
  • 1/2 c. veggie oil
  • 1 c. brewed Pumpkin Spice Coffee
  • For the Pound Cake:
  • Pound Cake Mix 16 oz.
  • 1/2 stick butter, softened
  • 2 eggs
  • 2/3 c. milk
  • For the Pumpkin Spice Cream Cheese Frosting:
  • 8 oz cream cheese, room temp
  • ½ c. butter, room temp
  • 1 3/4 c. confectioners' sugar
  • 2 T. Pumpkin Pie Finishing Sugar
  • 1 T. maple syrup
  • Garnish: chopped pecans and Pumpkin Spice Finishing Sugar, optional

Directions

  1. Preheat Oven to 350*. Line a large sheet pan (11x17) with parchment paper. Set aside.
  2. Combine ingredients for pumpkin spice cake according to package directions. (Spice cake mix, 3 eggs, 1/2 c. veggie oil and 1 c. brewed Pumpkin Spice Coffee) Pour batter onto sheet pan and bake in oven until a toothpick comes out clean, about 20-22 minutes. Remove from oven and set aside to cool.
  3. While your spice cake is cooling, prepare your pound cake, according to package directions (Pound Cake Mix, 1/2 stick butter, softened, 2 eggs and 2/3 c. milk). Set aside.
  4. Now that your Spice Cake has cooled completely, use a pumpkin shaped cookie cutter and gently cut out pumpkin-shaped pieces of cake. If necessary, trim the bottom of the pumpkin cake so that the bottom is flat, as they need to stand up in a loaf pan.
  5. Prepare your loaf pan by buttering and flouring the sides and adding parchment paper for easy removal of loaf after baked. Place your pumpkin shaped slices in your prepared loaf pan, standing them up. Gently pour pound cake batter over the pumpkin cake slices, starting on the sides and the gently pouring over the top. Bake cake for 45-50 minutes, until a toothpick inserted in cake comes out clean. Remove from oven to cool completely.
  6. While the cake is baking, Make Pumpkin Spice Cream Cheese Frosting. In a mixer, beat the cream cheese and butter until well combined. Add the Pumpkin Pie Finishing Sugar and maple syrup and beat until sugar is incorporated. Gradually add in the confectioners' sugar. Whip until creamy.
  7. Once your cake is fully cooled, add Pumpkin Spice Cream Cheese Frosting. Garnish with chopped pecans if desired. Slice your cake and enjoy the surprise pumpkin inside!
