Ingredients

  • 1 cup all-purpose flour
  • 3/4 tsp baking powder
  • 1/2 tsp coarse sea salt
  • 1 stick (1/2 cup) butter, softened to room temperature
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 Tbsp Java Momma coffee grounds, sifted
  • 1 tsp Chai Baking Spice
  • 2 eggs
  • 3 Tbsp Java Momma Cold Brew Coffee
  • 1 tsp vanilla extract
  • 3/4 cup chocolate chunks or chips
  • 3/4 cup salted pecans, roughly chopped

Directions

  1. Preheat oven to 350°F (175°C). Butter and line an 8x8-inch baking pan with parchment paper.
  2. In a small bowl, whisk together flour, baking powder, and sea salt. Set aside.
  3. In a large mixing bowl, whisk together brown sugar, granulated sugar, sifted coffee grounds, and Chai Baking Spice.
  4. Add softened butter to the sugar mixture and beat until creamy and well combined.
  5. Add eggs, Cold Brew Coffee, and vanilla extract. Whisk until smooth.
  6. Gently fold in the flour mixture until just combined.
  7. Fold in 1/2 cup each of the chocolate chunks and chopped pecans.
  8. Pour batter into prepared pan and smooth the top.
  9. Bake for 15-20 minutes. Remove from oven and sprinkle remaining chocolate chunks and pecans over the top.
  10. Return to the oven and bake an additional 10-15 minutes, or until top is golden and a toothpick inserted comes out clean.
  11. Cool completely in the pan on a wire rack. Remove using parchment and cut into squares.
  12. Optional: Serve warm with a scoop of vanilla ice cream for an extra treat!
