Ingredients

For the Blondie:

  • ¾ cup salted butter, softened
  • 1 cup light brown sugar
  • 1 large egg
  • 1 Tbsp Three Beans Butter Beer coffee, finely ground
  • 1 Tbsp Three Beans Butter Beer coffee, brewed
  • 1½ cups all-purpose flour
  • ¾ tsp baking powder
  • ¾ cup chocolate chips
  • ¼ cup butterscotch chips

For the Glaze:

  • ¼ cup plus ⅛ cup powdered sugar
  • 1 packet Java Momma cocoa mix — we love Chocolate Truffle Cocoa for this one
  • 1 Tbsp cocoa powder
  • 1 Tbsp Three Beans Butter Beer coffee, brewed and cooled

Directions

  1. Prep the pan. Preheat oven to 350°F. Line an 8x8-inch pan with parchment paper.
  2. Cream and combine. In a large mixing bowl, combine the softened butter and brown sugar; beat until soft and fluffy. Add the egg and both the finely ground and brewed coffee; mix well.
  3. Add the dry ingredients. In a small bowl, whisk together the flour and baking powder. Add to the butter mixture and mix until just combined. Fold in the chocolate and butterscotch chips.
  4. Bake. Press the batter into the prepared pan and smooth to the edges. Bake 25 minutes, or until a toothpick inserted into the center comes out clean.
  5. Glaze. While the blondies cool, combine all glaze ingredients in a small bowl and mix until fully smooth. Once the blondies are cool, drizzle with the glaze and finish with a sprinkle of flaky salt if desired.
