Ingredients

  • For the Blondies:
  • 3/4 cup salted butter, softened
  • 1 cup light brown sugar
  • 1 large egg
  • 1 tablespoon finely ground Three Beans Butterbeer coffee
  • 1 tablespoon brewed Three Beans Butterbeer coffee
  • 1 1/2 cups all-purpose flour
  • 3/4 teaspoon baking powder
  • 3/4 cup chocolate chips
  • 1/4 cup butterscotch chips
  • For the Glaze:
  • 1/4 cup + 1/8 cup powdered sugar
  • 1 packet Java Momma Cocoa or Mocha mix (we love Double Chocolate Mocha!)
  • 1 tablespoon cocoa powder
  • 1 tablespoon brewed Butterbeer coffee, cooled

Directions

  1. Preheat oven to 350°F (180°C) and line an 8×8-inch pan with parchment paper.
  2. In a mixing bowl, cream butter and brown sugar until soft and fluffy.
  3. Beat in the egg, ground coffee, and brewed coffee until well combined.
  4. In a separate bowl, whisk together flour and baking powder. Gradually stir into wet mixture.
  5. Fold in chocolate and butterscotch chips.
  6. Press batter evenly into prepared pan. Bake for 25 minutes or until a toothpick comes out clean.
  7. While blondies cool, whisk all glaze ingredients together until smooth.
  8. Drizzle glaze over cooled blondies and sprinkle with flaky salt if desired. Slice and enjoy!
