  • ⅔ cup sugar
  • 3 Tbsp cornstarch
  • 1 cup evaporated milk
  • 1 cup brewed Rainforest Crunch Coffee, cooled
  • 1 extra-large egg
  • 2 tsp vanilla extract
  • 2 Tbsp salted butter
  • 1 chocolate graham cracker pie crust
  • Whipped topping, optional for serving

Directions

  1. Mix Dry Ingredients:
  2. In a microwave-safe glass bowl, whisk together the sugar and cornstarch.
  3. Add Liquids:
  4. Pour in the coffee and evaporated milk. Whisk until sugar and cornstarch are fully dissolved.
  5. Whisk in Egg:
  6. Add the egg and whisk again until the mixture is smooth and uniform.
  7. Microwave & Stir:
  8. Microwave on high for 3 minutes. Remove and whisk until smooth.
  9. Continue microwaving in 1–2 minute intervals, whisking after each, until the mixture thickens—about 8–10 minutes total.

  13. Pour the warm custard into the chocolate graham cracker crust. Let cool at room temperature for 30–60 minutes.
