Cinnamon Dolce Syrup
This is the easy, homemade syrup behind a proper Cinnamon Dolce Latte — over Colombian Medium Roast or whatever's in your cup — and it doesn't stop there. It's just as good in a Cinnamon Dolce Tea Latte, stirred into caramel apple spice cider, or drizzled over waffles and ice cream. One batch, a lot of places to put it.

The Coffee That Makes This Work
Colombian Medium Roast is bright and citrus-forward with a caramel finish of its own — which means it doesn't just carry the cinnamon and vanilla, it actually plays off them. If you'd rather lean into a dessert-style version, a flavored coffee like Sticky Bun or Victorian Caramel works beautifully too. You could use any coffee — but this is the one the recipe was built around.

Cinnamon Dolce Syrup
Equipment
- Medium saucepan
- Glass jar or bottle with a tight lid
- Fine mesh strainer, if you'd rather not leave the cinnamon sticks in the jar
Ingredients
- 1 cup water
- 1 cup granulated sugar, brown sugar, or a combination of both (see note)
- ½–¾ tsp ground cinnamon
- 2 cinnamon sticks
- ½–¾ tsp vanilla bean paste or vanilla extract
Instructions
- Without turning on the burner, add the water and sugar to a medium saucepan. Stir until the sugar has mostly dissolved into the water.
- Add the cinnamon sticks and ground cinnamon. Stir to incorporate.
- Turn the burner to medium heat. Bring the mixture to a low boil, then reduce heat and simmer for 5–8 minutes, stirring regularly. The syrup will thicken slightly as it goes.
- Remove from the heat and stir in the vanilla.
- Let cool completely, then store in an airtight container. Strain out the cinnamon sticks first if you'd rather not leave them in the jar.
A note on sugar: Brown sugar brings notes of caramel, toffee, and molasses. Granulated sugar is clean and neutral. If you want the cinnamon flavor to lead, use granulated. If you want more caramel depth, use brown, or split the cup between both.
Storage & Shelf Life
Store in an airtight jar in the refrigerator for about 3–4 weeks, the same as most standard sugar-based syrups. Give it a stir before using. If it ever smells off or looks cloudy in a way it didn't before, toss it regardless of the date.

- Espresso, or strong brewed Colombian Medium Roast — or a flavored coffee like Apple Almond Crisp, Sticky Bun, Victorian Caramel, or Peach Pie
- 2 Tbsp Cinnamon Dolce Syrup
- 1 cup milk of choice
- Crushed ice, for the iced version
- Whipped cream and ground cinnamon, optional
- Add the Cinnamon Dolce Syrup to your mug.
- Brew your Java Momma coffee of choice directly over the syrup. Stir.
- Warm your milk of choice and froth until creamy. Pour over the coffee mixture. (For iced: cold-froth the milk and pour over ice instead.)
- Garnish with whipped cream and a sprinkle of ground cinnamon, if desired.

Cinnamon Dolce Tea Latte

- Strong brewed Tiffany's Breakfast — or a Java Momma tea of choice like Masala Chai, Rooibos Vanilla Chai, or Apricot Crush
- 2 Tbsp Cinnamon Dolce Syrup
- 1 cup milk of choice
- Crushed ice, for the iced version
- Whipped cream and ground cinnamon, optional
- Steep the tea: pour 6–8 oz hot water over your loose tea and let it steep 3–5 minutes, depending on the tea. Strain out the leaves.
- Stir the Cinnamon Dolce Syrup directly into the brewed hot tea.
- Warm your milk of choice and froth until creamy. Pour over the tea mixture. (For iced: cold-froth the milk and pour over ice instead.)
- Garnish with whipped cream and a sprinkle of ground cinnamon, if desired.

What does cinnamon dolce syrup taste like?
Warm cinnamon up front with a rounded, slightly caramel sweetness underneath — the vanilla softens the spice so it reads as dessert-like rather than sharp.
Should I use brown sugar or granulated sugar?
Either works. Granulated sugar is clean and neutral, so the cinnamon flavor leads. Brown sugar adds caramel, toffee, and molasses notes underneath it. Splitting the cup between both gives you a middle ground.
How long does homemade cinnamon dolce syrup last?
About 3–4 weeks in the refrigerator in an airtight container, similar to most standard sugar syrups.
Can I leave the cinnamon sticks in the jar?
