The Coffee That Makes This Work
Pumpkin Spice Latte Coffee brings its own cinnamon, nutmeg, and clove to the mug before the syrup or the cookie butter even show up — so instead of pumpkin spice flavoring fighting a plain roast, everything's already pointed the same direction. Brew it strong and this drink barely needs the extra syrup to taste like dessert. You could use another medium roast — but this is the one the recipe was built around.

Pumpkin Cookie Butter Latte
Equipment
- Milk frother (handheld, jug, or your espresso machine's steam wand)
- Mug (hot) or tall tumbler (iced)
- Small saucepan or microwave-safe cup, for warming milk
Ingredients
- 2–3 Tbsp Pumpkin Spice Syrup, divided
- Espresso, or 4–6 oz strong brewed Pumpkin Spice Latte Coffee
- 6–8 oz milk of choice
- 1–2 Tbsp cookie butter, divided
- Crushed ice, if serving iced
- A spiced finishing sugar, for garnish, if desired
- Crushed cookie butter sandwich cookies, for garnish, optional
Cookie butter is the jarred speculoos-style spread from the grocery aisle — any brand works. Same with the sandwich cookies for garnish — whatever cookie butter cookie you can find.
Instructions — Hot
- Combine 1–2 Tbsp Pumpkin Spice Syrup and 1 Tbsp cookie butter with your hot brewed Pumpkin Spice Latte Coffee. Set aside.
- Warm the milk of choice and froth to your desired consistency. Pour over the coffee mixture.
- Garnish with finishing sugar and crushed cookie butter cookies, if using.

Instructions — Iced
- Combine the syrup, cookie butter, and coffee as in step 1 above.
- Add a schmear of cookie butter inside a tall tumbler. Add ice, then milk of choice.
- Top with the coffee mixture.
- Top with Pumpkin Spice Cold Foam (recipe below) or whipped cream.
- Garnish with finishing sugar and crushed cookie butter cookies, if using.
Notes
Pumpkin Spice Cold Foam (for the iced version): Combine 3 Tbsp heavy cream, 2 Tbsp milk, and 1 Tbsp Pumpkin Spice Syrup. Froth to your desired consistency. Whipped cream works fine here too if that's what's easier.
This drink is built on the Pumpkin Spice Syrup — the full syrup recipe, storage notes, and a dozen other ways to use it live over there if you want to make a bigger batch.

FAQ
What is a pumpkin cookie butter latte?
It's a fall latte built on pumpkin spice syrup, a spoonful of cookie butter, and Pumpkin Spice Latte Coffee — it tastes like a pumpkin sandwich cookie dissolved into your morning coffee, in the best way.
Do I need an espresso machine to make this?
No — espresso is the classic base, but 4–6 oz of strong brewed Pumpkin Spice Latte Coffee works the same way. Brew it a little stronger than usual so it holds up under the milk and syrup.
What's in the Pumpkin Spice Cold Foam?
Heavy cream, milk, and a tablespoon of the Pumpkin Spice Syrup, frothed until it's thick enough to sit on top of the iced drink. Whipped cream is a fine stand-in if you'd rather skip the frothing.
Can I make the hot and iced versions from the same batch?
Yes — the syrup-and-cookie-butter base is identical for both. The only difference is what happens after: warmed frothed milk for hot, or ice plus cold foam for iced.
What's the pumpkin spice syrup made of?
Real pumpkin purée, brown and granulated sugar, vanilla, and pumpkin pie spice, simmered for about five minutes. Full recipe here if you want to make a batch ahead.
