Ingredients

  • For the Coffee Butter:
  • 1/4 cup heavy cream
  • 3 tbsp Bananas Foster Coffee
  • 1 stick unsalted butter
  • For the Muffins:
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 1/4 cup brewed Bananas Foster Coffee
  • 2 eggs
  • 2 bananas, mashed
  • 2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 3/4 cup hazelnut spread
  • For the Coffee Streusel:
  • 1/4 cup flour
  • 1/2 cup oats
  • 3/4 cup brown sugar
  • 1 tsp finely ground (espresso) Bananas Foster Coffee (optional)
  • 1/2 tsp cinnamon or nutmeg
  • 6 tbsp cold butter, cubed

Directions

  1. In a small bowl, mix the flour, brown sugar, Banana Foster ground coffee, and cinnamon.
  2. Add the cold butter and mix with a fork until crumbly. You can also use a food processor for this step.
  3. Place in the fridge while you prepare the muffins.
  4. Preheat the oven to 375°F. Line two muffin pans with liners and set aside.
  5. In a large mixing bowl, combine the sugar, brown sugar, vegetable oil, Banana Foster coffee, eggs, and mashed banana. Mix on medium until just combined.
  6. In a separate bowl, sift together the flour, baking soda, baking powder, cinnamon, and nutmeg. Once combined, add the dry ingredients to the wet ingredients. Mix until just incorporated.
  7. Fill each muffin cup halfway. In a microwave-safe bowl, heat the hazelnut spread for about 15 seconds.
  8. Spoon 1 tsp of hazelnut spread into each muffin and use a knife to swirl it in.
  9. Remove the crumble topping from the fridge and sprinkle some over each muffin.
  10. Place the muffin tins in the preheated oven and bake for about 20 minutes, or until a toothpick inserted in the center comes out clean.
  11. Remove from oven and pan. Allow to cool slightly, but they are truly heavenly when warm!
