  • For the Muffins:
  • 1 cup flour
  • 1/2 tbsp baking powder
  • 1 egg
  • 1/3 cup sugar
  • 3 tbsp brewed Blueberry Creme Coffee
  • 1/2 cup Greek yogurt
  • 1/8 cup coconut oil, melted and cooled
  • 3/4 cup fresh blueberries
  • For the Coffee Crumble:
  • 1/3 cup flour
  • 1/2 cup oats
  • 1/4 cup sugar
  • 4 tbsp coconut oil, melted and cooled
  • 1 tsp cinnamon
  • 1 tbsp brewed Blueberry Coffee

Directions

  1. For the Crumble:In a bowl, stir together the flour, oats, sugar, cinnamon, and brewed Blueberry Coffee using a fork. Set aside.
  2. Preheat oven to 375°F and prepare a muffin tray (makes 9 muffins).
  3. In a small bowl, whisk together the flour and baking powder. Set aside.
  4. In a mixer, blend together sugar, egg, yogurt, coconut oil, and brewed Blueberry Creme Coffee until well combined.
  5. Add the flour mixture to the wet ingredients and mix at low speed until just incorporated.
  6. Toss the blueberries in a bit of flour before folding them into the batter using a spatula.
  7. Scoop the batter evenly into the prepared muffin pan.
  8. Top each muffin with a few extra blueberries if desired. Evenly distribute the coffee crumble over each muffin.
