  • 1 tbsp sugar
  • 1/4 cup butter, softened
  • 2/3 cup flour
  • For the Muffins:
  • 1 3/4 cups flour
  • 1 tsp baking soda
  • 1 1/2 tsp baking powder
  • 1/2 cup salted butter
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1 tbsp orange zest (optional)
  • 2 large eggs
  • 1/2 cup Greek yogurt (coconut flavor recommended)
  • 4 tbsp milk of choice
  • 2 tbsp Elderberry Glow Tea (or your favorite Java Momma Tea!)
  • 1 1/2 cups fresh or frozen cranberries

Directions

  1. In a small bowl, mix the brown sugar, granulated sugar, and softened butter together until combined.
  2. Add the flour and use a fork to gently mix until crumbs form. Set aside.
  3. Preheat oven to 350°F. Line a muffin tin with cupcake liners and set aside.
  4. In a medium bowl, whisk together the flour, baking soda, and baking powder. Set aside.
  5. In a small bowl, mix the yogurt, milk, and Elderberry Glow Tea. Let steep for 10 minutes, then strain to remove tea leaves.
  6. In a large bowl, beat butter, sugar, and brown sugar together on high speed until smooth and creamy, about 2 minutes.
  7. Add the orange zest and eggs, beating for 1 minute, then increase to high speed until combined. Scrape down the sides of the bowl as needed.
  8. With the mixer on low speed, add the dry ingredients and the yogurt mixture. Beat until just combined, ensuring no flour pockets remain.
  9. Toss cranberries in 1 tbsp flour to coat, then gently fold them into the batter without overmixing. Batter will be thick.
  10. Spoon batter into prepared muffin cups, filling them 3/4 full. Generously top with the crumb mixture.
  11. Bake for 17-20 minutes, or until a toothpick inserted in the center comes out clean.
