Tea Rubbed Roasted Cauliflower
This is one of those recipes that usually happens when the oven is already on and the fridge is feeling a little sparse.
Roasted cauliflower has that quiet magic — earthy, nutty, and just sweet enough around the edges when it caramelizes. Add a tea-forward rub and a little citrus, and suddenly it feels like something you meant to make.
No fuss. No big plans. Just a solid tray of something warm that works whether it’s dinner or the thing you keep nibbling straight from the pan.

Ingredients
- 1 head cauliflower
- 3 tbsp olive oil
- 2 tbsp fresh orange or lemon juice
- 1½ tbsp Smoked Tea Rub (or another Java Momma rub you love)
- 2 tbsp honey or maple syrup
- ½ tsp salt

Method (Oven)
- Preheat the oven to 425°F. Line a baking sheet with parchment paper.
- Slice cauliflower into steaks about ¾-inch thick. You’ll get 2–3 solid slices from the center; the ends will fall into florets (save those for another recipe).
- In a small bowl, whisk together olive oil, citrus juice, Smoked Tea Rub, honey (or maple syrup), and salt.
- Brush the mixture over the cauliflower steaks on both sides and place on the baking sheet.
- Roast for 10 minutes. Flip carefully, then roast another 10–15 minutes, until tender with browned edges.
Air Fryer Option
On nights when turning on the oven feels like a whole thing, the air fryer handles this beautifully.
- Preheat air fryer to 375°F
- Prepare the cauliflower exactly as written
- Arrange in a single layer (work in batches if needed)
- Air fry 10–12 minutes, flipping carefully halfway through
- Cook until tender with browned, lightly crisp edges
Cozy notes: Smaller steaks and loose florets do especially well here. If your air fryer runs hot, start checking around the 8-minute mark. A light extra brush of the honey-citrus mixture after flipping keeps everything glossy and flavorful.
Notes & easy swaps
- If you want it less sweet, pull back slightly on the honey.
- This rub works beautifully with broccoli, carrots, or thick slices of cabbage too.
- Serve alongside grilled chicken, salmon, tofu, or whatever protein you’ve got going.
