Method

  1. Make mocha base: In a small saucepan, whisk cocoa (or chocolate syrup) with 2 Tbsp strained plum syrup over low heat until smooth and warm.
  2. Brew: Pull espresso or brew strong coffee; add to the mocha-plum base and stir.
  3. Froth: Warm and froth milk until creamy; stir in vanilla if using.
  4. Assemble: Pour frothed milk over the coffee mixture. Top with whipped cream, a drizzle of plum syrup, and shaved chocolate.
