- 1 Tbsp Rooibos Vanilla Chai (brewed strong)
- 1 pouch (17.5 oz) sugar cookie mix
- ½ tsp chai baking spice, plus more for dusting
- ½ cup all-purpose flour
- 1 egg
- ½ cup butter, softened
- ¼ cup eggnog, divided
- Turbinado cinnamon sugar (for rolling)
- 1 cup confectioners’ sugar
Method
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- Brew chai in 2 oz hot water for 5 minutes. Strain and discard tea leaves.
- In a large bowl, mix cookie mix, brewed chai, chai spice, flour, egg, butter, and 1 Tbsp eggnog until fully combined.
- Drop dough 2 inches apart onto prepared baking sheet.
