This Berry Caprese Salad combines sweet berries, creamy mozzarella, and peppery arugula, all brought together with a rich Coffee Balsamic Glaze. Trust us—this unexpected flavor combination is pure magic!

Ingredients

  • 🥗 For the Salad:
  • 4 cups arugula
  • 2 tbsp. avocado oil or olive oil
  • 1 tbsp. lemon juice
  • 1 tsp. sea salt
  • 2 cups strawberries, cubed
  • 1 cup fresh blueberries
  • 1 cup fresh blackberries
  • 1 cup fresh raspberries
  • 8 oz. fresh mozzarella pearls
  • 2 tbsp. fresh basil, chopped
  • 2 tbsp. fresh mint, chopped
  • ⅓ cup toasted cashews or almonds (optional)
  • ☕ For the Coffee Balsamic Glaze:
  • 1 cup dark balsamic vinegar
  • 1 ½ tsp. sugar
  • ⅓ cup cold brewed Sumatra Satin coffee
  • ⅓ cup fresh or frozen cherries

Directions

  1. 1️⃣ Make the Coffee Balsamic Glaze:
  2. In a saucepan over medium heat, add balsamic vinegar. Reduce by half, stirring occasionally.
  3. Once reduced, add sugar, coffee, and cherries. Continue to stir and reduce by ¼ more.
  4. Strain the glaze into a small container with a lid and let cool. (Store at room temp for use on salads, fruits, ice cream, and meats!)
  5. Bonus: Save the glazed cherries to top yogurt, waffles, or desserts!
  6. 2️⃣ Assemble the Salad:
  7. In a large bowl, toss arugula with avocado oil, lemon juice, and sea salt.
  8. Transfer arugula to a serving platter and arrange berries and mozzarella pearls on top.
  9. Drizzle generously with Coffee Balsamic Glaze.
  10. Garnish with fresh basil, mint, and toasted cashews or almonds (if using).
  11. Serve immediately & enjoy!
