Whisk together your pudding mix, brewed Dragon’s Blend Coffee and Cream of Coconut together until smooth. Set aside.
In a large mixing bowl, whip heavy cream and sugar until soft peaks form.
Fold ½ to all of whipped topping into your pudding mixture. The more whipped cream folded in the lighter and airier it will be.
Place Fudge Pop Mixture into short solo cups about ¾ full. Place a Popsicle stick in center and place in freezer overnight.
To unmold, cut a small slit in the solo cup and peel off. Return to freezer until ready to serve.
To dip Fudge Pops, melt dark chocolate and let cool slightly. Dip the end of the Fudge Pop onto the chocolate and then sprinkle toasted coconut on melted chocolate. Return to the freezer until ready to serve.
