Ingredients

For the Marinade

  • 3/4 cup peach preserves
  • 1/4 cup brewed Peaberry Medium Roast coffee
  • 2 Tbsp olive oil
  • 2 tsp apple cider vinegar
  • 2 tsp coarse Dijon mustard
  • 2–3 tsp Smoked Tea Rub
  • Sea salt, to taste

For the Salmon

  • 4 salmon fillets (about 1½ lbs), skin on
  • 1 Tbsp olive oil
  • 2 peaches, thinly sliced
  • Fresh parsley, for garnish

Method

  1. In a bowl, whisk together all marinade ingredients. Season with salt.
  2. Set aside about 3/4 cup of the marinade and refrigerate.
  3. Place salmon in a resealable bag and pour in remaining marinade. Marinate 30–60 minutes.
  4. Preheat oven to 375°F.
  5. Heat olive oil in an oven-safe skillet over medium-high heat.
  6. Sear salmon skin-side up for 3–5 minutes until golden. Flip.
  7. Add peaches and cook 2–3 minutes.
  8. Pour reserved marinade over salmon and peaches.
  9. Transfer skillet to oven and bake 8–10 minutes, until salmon reaches 145°F.
  10. Garnish with parsley and serve hot.

Notes & Swaps

  • This marinade works well with chicken or pork too.
  • If peaches aren’t in season, frozen slices work just fine.
  • Serve with rice, roasted vegetables, or a simple salad.
