Ingredients
For the Marinade
- 3/4 cup peach preserves
- 1/4 cup brewed Peaberry Medium Roast coffee
- 2 Tbsp olive oil
- 2 tsp apple cider vinegar
- 2 tsp coarse Dijon mustard
- 2–3 tsp Smoked Tea Rub
- Sea salt, to taste
For the Salmon
- 4 salmon fillets (about 1½ lbs), skin on
- 1 Tbsp olive oil
- 2 peaches, thinly sliced
- Fresh parsley, for garnish
Method
- In a bowl, whisk together all marinade ingredients. Season with salt.
- Set aside about 3/4 cup of the marinade and refrigerate.
- Place salmon in a resealable bag and pour in remaining marinade. Marinate 30–60 minutes.
- Preheat oven to 375°F.
- Heat olive oil in an oven-safe skillet over medium-high heat.
- Sear salmon skin-side up for 3–5 minutes until golden. Flip.
- Add peaches and cook 2–3 minutes.
- Pour reserved marinade over salmon and peaches.
- Transfer skillet to oven and bake 8–10 minutes, until salmon reaches 145°F.
- Garnish with parsley and serve hot.
Notes & Swaps
- This marinade works well with chicken or pork too.
- If peaches aren’t in season, frozen slices work just fine.
