Ingredients

  • 2 lbs Yukon Gold potatoes
  • ¾ cup whole milk
  • ½ lb Irish cheddar, shredded
  • 2-3 tbsp olive oil
  • 4 (12 oz) smoked sausages
  • 4 tbsp butter, divided
  • 1 red onion, thinly sliced
  • 1 sweet onion, thinly sliced
  • 4 cloves garlic, minced
  • 1 tsp Bourbon Barrel Smoked Pepper
  • 1/4 tsp sea salt
  • 3 tbsp all-purpose flour
  • 1 cup brewed Not The Momma's Blend coffee
  • 1 cup beef broth

Directions

  1. Place the potatoes in a large pot and cover with cold water. Season with a big pinch of salt. Bring the water to a boil over high heat. Reduce the heat to medium-low and simmer until fork-tender.
  2. Grate the Irish cheddar and set aside.
  3. While the potatoes cook, heat a non-stick skillet over medium heat. Add 2-3 tbsp olive oil to coat the bottom. Once hot, place the sausages into the skillet. Cook until deeply browned, about 3 minutes per side. Remove the sausage to a plate and set aside.
  4. In the same skillet, add 2 tbsp butter and let it melt. Add the thinly sliced onions and sauté for 5 minutes until slightly caramelized. Stir in the garlic and cook for an additional minute. Season with Bourbon Barrel Smoked Pepper and sea salt. Continue to cook over low heat for about 5 more minutes or until the onions are fully caramelized.
  5. Add flour and mix until completely combined.
  6. Pour in the brewed Not The Momma's Blend coffee and stir to combine. It will be thick. Then add the beef broth and mix until combined. Simmer over low heat, stirring, until the gravy thickens but remains slightly thinner than desired—it will thicken more as it sits.
  7. Meanwhile, drain the potatoes. Place the pot back over the stove and add the remaining 2 tbsp butter and the milk over medium-low heat. Mix and mash to combine.
  8. Stir in the shredded cheddar into the potatoes. Season with salt and Bourbon Barrel Smoked Pepper to taste.
  9. Serve the sausages with the mashed potatoes on the side and the onion gravy poured over top. Garnish with chives and enjoy!
