Ingredients

  • 1 1/4 cups pecans
  • 10.5 oz. Biscoff Cookies
  • 2 tablespoons cocoa powder
  • 3/4 cup confectioners’ sugar
  • 2 teaspoons vanilla extract
  • 1/2 cup brewed Speculoos Cookie Butter Coffee
  • 2 tablespoons honey
  • Unsweetened coconut
  • Finely chopped pecans
  • Chocolate jimmies
  • Holiday sprinkles

Directions

  1. Prepare the Base: Place pecans and Biscoff cookies in a food processor. Pulse until finely ground into crumbs.
  2. Add confectioners’ sugar and cocoa powder, and pulse a few more times to combine.
  3. Mix the Dough: Transfer the mixture to a large bowl. Stir in brewed coffee, vanilla extract, and honey until fully combined.
  4. The dough will be wet but thick. Let it sit for 10 minutes to allow the crumbs to absorb the liquid.
  5. Set Up the Coatings: Place your chosen coatings in small bowls.
  6. Form the Balls: Scoop a tablespoon of the mixture and roll into a ball.
  7. Coat each ball in your desired topping and place in mini baking cups or on a parchment-lined tray.
  8. Chill: Refrigerate for at least 2 hours to firm up. Mocha Balls can be stored in the refrigerator for up to 5 days or kept at room temperature for a few days.
