Ingredients

  • 16 oz pasta of choice
  • 2 tsp olive oil
  • 4 medium ears of corn, husked
  • 2 limes, juiced
  • ½ cup mayonnaise
  • ½ cup sour cream or Greek yogurt
  • 2 cloves garlic, crushed
  • ½ tsp Corn on the Cob Seasoning
  • ½ tsp Mojito Lime seasoning
  • 1 tsp Fan-Freakin-Tastic Fry Seasoning
  • 2 Tbsp chopped cilantro (plus extra for garnish)
  • ½ cup crumbled cotija cheese or queso fresco (plus more for topping)

Directions

  1. Cook pasta to al dente according to package directions. Drain and toss with olive oil in a large bowl. Let cool.
  2. Boil corn for about 5 minutes or until tender and bright yellow. Remove and let cool, then cut kernels off the cob.
  3. In a small bowl, whisk together lime juice, mayonnaise, sour cream (or Greek yogurt), garlic, Corn on the Cob Seasoning, Mojito Lime seasoning, and Fan-Freakin-Tastic Fry Seasoning.
  4. In a medium bowl, mix corn, cilantro, and cotija cheese with the sauce.
  5. Add the corn mixture to the cooled pasta and toss until well coated.
  6. Garnish with extra cilantro, cheese, and a sprinkle of seasoning if desired.
  7. Serve immediately or chill until ready to serve.
