Ingredients

  • 1 pound quick oats (divided: half to grind into oat flour)
  • 3 cups coarsely chopped raw nuts and/or seeds (e.g., unsweetened coconut, peanuts, almonds, walnuts, pepitas)
  • 2 tsp Chai Spice Blend ( or your fav mix of spices ~ apple pie, cinnamon, cardamon, nutmeg)
  • 1 cup brown sugar, packed
  • 1/2 cup unsalted butter
  • 1/3 cup Salty Honey Caramel coffee
  • 1/2 tsp sea salt
  • 2 tsp vanilla bean paste or honey
  • 2 cups dried fruit (e.g., raisins, dried pineapple, dried papaya, figs, apricots etc)

Directions

  1. Preheat the oven to 300°F (150°C).
  2. In a food processor, coffee grinder, or blender, grind half of the oats into a fine powder to create oat flour.
  3. In a large bowl, combine the whole oats, oat flour, chopped nuts, and chai spice blend.
  4. In a microwave-safe bowl or saucepan over medium heat, combine the brown sugar, butter, and coffee.
  5. Heat until the butter melts and the mixture becomes bubbly.
  6. Stir until smooth, then mix in the sea salt and vanilla extract.
  7. Pour the wet mixture over the dry ingredients.
  8. Stir well to coat everything evenly. Add a tablespoon or two of water if the mixture isn’t uniformly moist.
  9. Let the mixture rest for 10 minutes.
  10. Spread the mixture onto a large parchment-lined baking sheet, forming irregular clumps with your fingers. Leave space between the clumps for air circulation.
  11. Bake on the middle rack for 25–30 minutes, until the top is golden brown.
  12. Remove the baking sheet from the oven, stir the mixture, and gently break it into smaller clumps.
  13. Return to the oven and bake for another 15 minutes. Repeat the process of stirring and baking every 15 minutes until the granola is uniformly golden brown and completely dry. This may take 1 to 1 ½ hours total.
  14. Let the granola cool completely. Stir in your choice of dried fruits.
  15. Store in an airtight container at room temperature.
  16. Serve with milk, plain yogurt, or fresh fruit for a delicious breakfast or snack.
