Ingredients

  • 1 cup butter, softened
  • 1 cup brown sugar
  • ½ cup granulated sugar
  • 1 Tbsp finely ground Cadbunny Coffee
  • 2 eggs
  • 1 Tbsp brewed Cadbunny Coffee
  • 1½ Tbsp cornstarch
  • ½ tsp baking powder
  • ½ tsp baking soda
  • 3 to 3½ cups all-purpose flour
  • ½ cup white chocolate chips
  • 1 cup chocolate chips
  • 2 cups roughly chopped Cadbury mini eggs, divided

Directions

  1. Preheat & Prep:
  2. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  3. Cream Butter & Sugars:
  4. In a large bowl, beat butter, brown sugar, granulated sugar, and finely ground Cadbunny Coffee until smooth and creamy.
  5. Add Eggs & Brewed Coffee:
  6. Add eggs and brewed Cadbunny Coffee to the bowl. Beat again until fully combined.
  7. Mix Dry Ingredients:
  8. In a separate bowl, combine cornstarch, baking powder, baking soda, and 3 cups of flour. Slowly mix dry ingredients into the wet mixture until just combined. If dough feels too sticky, add up to ½ cup additional flour, ¼ cup at a time.
  9. Stir in Chocolate & Candy:
  10. Fold in white chocolate chips, chocolate chips, and 1 cup of chopped Cadbury mini eggs.
  11. Shape & Top:
  12. Roll dough into 2-Tablespoon-sized balls. Lightly press each ball into the remaining 1 cup of chopped mini eggs for a colorful topping.
  13. Bake:
  14. Place on prepared baking sheet and bake for 10–12 minutes. Cookies should be just set and slightly golden on the edges.
  15. Cool:
  16. Allow to cool on the pan for a few minutes before transferring to a wire rack. Once fully cooled, store in an airtight container.
