Java Momma's Brazilian Coffee Blends

Different roasts of the same blend of beans can produce different top flavors, but the underlying sweet undertones remain the same. The medium roast has a nutty taste, while the dark roast has hints of cinnamon.

The Unique Characteristics of Brazilian Coffee

The mild flavors of Brazilian coffee are a result of a combination of factors including altitude, climate, variety of plants, maturity, and processing methods. Unlike Colombian beans, which are often grown on high-altitude farms, Brazilian coffee is mostly grown at lower altitudes. The sunny climate after the harvest allows the beans to be naturally processed by sunbathing. Smaller family farms process the beans by hand, down to the separation of the beans by size and color.

When it comes to producing some of the finest coffee in the world, Brazilian coffee beans are a standout. One of the reasons why Brazilian coffee has a unique taste is because the cherries (or coffee fruit) are not removed prior to processing. This means that the fruity flavor of the outer skin has a direct impact on the final taste after brewing. To further enhance the flavor profile, various factors such as the type of soil, moisture level, days to harvest, and amount of husk left on during drying are all taken into consideration. These elements combine to produce a coffee that is not only rich in flavor, but also has a distinct character that sets it apart from other types of coffee. Java Momma sources our Brazilian beans from the Cerrado region in the state of Minas Gerais. This region has been producing coffee since the 1980s, mainly due to a devastating black frost in 1975 that forced growers from the Parana region to relocate north to Cerrado and other areas of Minas Gerais. Today, over 4,500 growers produce coffee on 175,000 hectares of farmland in Cerrado, yielding approximately 5.5 to 6.0 million bags per year. The region has rich soil known as "Terra Roxa" or "Red Earth" and favorable weather conditions including consistent rains, high daytime temperatures, and dry winters, making it ideal for producing high-quality coffee.
