Combine all ingredients in a large bowl. Mix with a spoon or your hands until completely combined.
Cover and refrigerate for flavors to meld, 4 hours or overnight.
Preheat the oven to 250* degrees and line a rimmed baking sheet with parchment paper. Spread the mixture into a thin layer, about 1/4″ thick. Place in the oven and cook for 15-18 minutes. Flip the meat over and cook for another 15-18 minutes.
Remove from oven and cut into shapes of choice. Place these pieces on a cooling rack and place the cooling rack onto of a baking sheet.
Return to the oven under the Broiler. Cook for 2 minutes on each side until browned and crisping.
Remove from oven. Cool the jerky and store in an airtight container in the fridge for up to a week.
