Waffles, Fritters, and One Very Good Milkshake

This fortnight in the kitchen, I kept doing the same thing without quite meaning to — start with a shortcut, then make it work harder than it should. Coffee went into the brownie batter instead of water. Coffee went into the waffle batter instead of water, then did a second job deglazing the sausage pan. There's a five-minute maple syrup upgrade nobody asked for but everyone's going to want. Even the spice jars got in on it — turns out our own Street Corn Blend makes a genuinely good fritter. And then there's the milkshake, which started as "we should use up these blackberries" and ended up closer to dessert than smoothie. Five recipes, one running theme: shortcuts are fine, they just deserve a little backup.

Sweet Corn Fritters with Avocado Crema

Corn muffin mix, real corn kernels, our own Street Corn Blend, and a quick avocado crema on top. I made these as a snack and they were gone before I finished blending the crema.

From the Kitchen: Blackberry Mocha Shake

Blackberry mocha shake with chocolate drizzle, whipped cream, and fresh blackberries in a tall glass

This one didn't make it into its own post, but it deserved a mention. Rich, bright, and creamy — sweet chocolate, fresh blackberries, and Death by Chocolate coffee blended into a shake worth making again before the ice melts. Swap the ice cream for Greek yogurt if you want it to lean more smoothie than dessert.

Ingredients

  • 1/2 cup fresh blackberries
  • 1–2 Tbsp honey or agave
  • 2–3 Tbsp chocolate syrup, divided
  • 4 oz strong brewed Death by Chocolate coffee (or espresso), cooled
  • 4 oz milk of choice — whole, almond, or coconut all work
  • 1–2 scoops vanilla ice cream (swap for Greek yogurt for a smoothie version)
  • 1 cup crushed ice
  • Whipped cream, for topping, optional
  • Fresh blackberries, for garnish, optional

Method

  1. Combine 1 Tbsp chocolate syrup with the cooled Death by Chocolate coffee. Set aside.
  2. In a small jar, combine blackberries and honey. Muddle completely.
  3. Blend the milk, ice cream, blackberry mixture, cooled coffee, and ice until smooth.
  4. Drizzle chocolate syrup around the inside of your glass, then pour in the shake.
  5. Top with whipped cream and a few fresh blackberries, if you're feeling it.

We used Death by Chocolate for this one — it's rich enough to hold its own once the ice cream and milk go in, instead of disappearing into the shake.
