Pot of Gold Shamrock Cold Brew Float

The pot of gold at the end of the rainbow has great coffee too. Enjoy this refreshing coffee drink with or without the “Irish” twist. It may cause spontaneous happy jigs.

Why You’ll Love It

  • Layered and cute, but still “I made this in 5 minutes” energy.
  • You choose the sweetness level (because you’re the boss here).
  • Works with or without Bailey’s — no judgment, only support.

Java Momma Twist: We’re using Cold Brewed Chocolate Shamrock Coffee because mint + chocolate + coffee is a mood, and life is too short for boring cups.

Mint chocolate cold brew float with frothed milk layers, chocolate drizzle, and vanilla ice cream, surrounded by gold coins and green shamrock decor.

What You’ll Need

For the Drink

  • 6 oz Cold Brewed Chocolate Shamrock Coffee
  • 4 oz milk of choice
  • 1–2 Tbsp Mint Simple Syrup (you choose the sweetness level)
  • Chocolate syrup (for drizzling + dramatic swirls)
  • 1 scoop vanilla or chocolate ice cream
  • Shot of Bailey’s, optional

Mint Simple Syrup*

  • 1/2 cup water
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1/4 cup fresh mint leaves
  • Drop of green food color (optional)

How To Make It

  1. Froth: Add mint simple syrup and milk to a tall tumbler. Froth to your desired fluff level.
  2. Drizzle: Drizzle chocolate syrup along the inside of the tumbler. (Yes, really coat it. This is the point.)
  3. Pour: Pour the cold brew through the center of the frothed milk and watch the layers of happiness appear.
  4. Optional “Irish” twist: Add a shot of Bailey’s if desired.
  5. Float: Add a scoop of ice cream and an extra chocolate drizzle.
  6. Final step: Do the Irish jig. All day long.

Little tip: Pour slowly right down the center for the cleanest layers. If it gets messy? Congrats, you did it correctly.

Mint Simple Syrup (Quick + Easy)

  1. Combine water, sugar, mint, vanilla, and food color (if using) in a small saucepan over medium heat.
  2. Stir until sugar dissolves and the syrup comes to a boil.
  3. Lower heat and simmer for 2 minutes.
  4. Remove from heat, strain out the leaves, and cool.
  5. Refrigerate until needed.

*If you don’t want to do the syrup thing today, store-bought mint syrup works. No one is grading you.

Swaps & Permission Slips

  • Dairy-free: Use oat/almond/coconut milk + dairy-free ice cream.
  • Lower sugar: Use a sugar substitute in the syrup, or do 1 Tbsp syrup and let the chocolate drizzle carry the sweetness.
  • No alcohol: Skip Bailey’s and keep the vibe. Still a pot of gold.

Cozy reminder: It doesn’t need to look perfect. It just needs to taste like fun.
