Ingredients
- 2 Tbsp espresso-ground Death by Chocolate coffee
- 1 Tbsp + 1 tsp milk
- 2 cups cake flour*
- ¼ cup cocoa powder
- ¼ cup + 2 Tbsp cornstarch
- ⅔ cup unsalted butter, room temperature
- 2 egg yolks
- ¾ cup + 2 Tbsp powdered sugar
Method
- Warm the milk in a microwave-safe bowl for about 15 seconds. Stir in the espresso grounds and set aside.
- In a large bowl, sift together cake flour, cornstarch, and cocoa powder. Set aside.
- In a mixing bowl, whisk the softened butter until creamy.
- Add powdered sugar and whisk until incorporated.
- Add egg yolks and whisk until the mixture is pale and creamy.
- Pour the coffee milk mixture into the butter mixture and mix until light brown in color.
- Sift the dry ingredients into the wet ingredients and mix until coarse crumbs form.
- Using your hands, gently press the dough together until smooth.
- Roll dough into a long log and divide into 1 Tbsp portions (about 30–40 pieces).
- Roll each piece into an oval shape, resembling a coffee bean.
- Use a toothpick to press a line down the center of each cookie.
- Place cookies on a parchment-lined baking sheet and chill for about 1 hour.
- Preheat oven to 325°F. Bake cookies for 12–14 minutes.
- Cool for 10 minutes before enjoying.
