Ingredients

  • 4 cups COLD water
  • 7 cups Brazil Medium coffee, brewed, cooled and divided
  • ¼ cup sea salt
  • ½ cup maple syrup or honey
  • 2 small oranges (quartered)
  • 1 small onion (quartered)
  • a few sprigs of rosemary
  • Whole Turkey up to 8 lbs.
  • 1/2 stick of softened butter
  • 1/8 cup Espresso Rub
  • 3 tablespoon Brown Sugar

Directions

  1. Direction Combine all ingredients together. Store in fridge until ready to use.
  2. Find a container large enough to hold liquid mixture and turkey. This can be a stock pot, a large plastic lidded bowl or a 5-gallon zip lock bag.
  3. Mix the water, coffee, salt and maple syrup and stir until salt is dissolved. Toss in all the remaining ingredients except for turkey.
  4. Remove the neck and bag of organs from the inside of turkey and rinse the turkey inside and out, place inside vessel of choice. Cover/close container that now contains the turkey. Place in the refrigerator for 18-24 hrs.
  5. Remove turkey from brine and discard brine, retaining the oranges, onions and rosemary to cook with turkey in pan. Pat inside and outside of turkey to slightly dry.
  6. Take the softened Compound Coffee Butter and rub under skin against meat and over the outside of turkey.
  7. Place the turkey in a roasting pan with reserved oranges and onions (placing a few inside the carcass). Pour 2 - 3 cups of brewed cooled Columbian Medium Coffee into the bottom of the dish. Cover Turkey will a foil tent.
  8. Cook in a preheated 350-degree oven following the instructions based on weight of your turkey. Remove foil cover from turkey during the last 20-30 minutes and continue to cook until meat thermometer inserted in thickest part of turkey reads 170 degrees.
  9. Allow turkey to rest at least 15 minutes before carving.
