How to Brew

Hot:
1–2 teaspoons per 8 oz of water. Heat water to just off boil — around 210°F. Steep 5–7 minutes. Pull at the shorter end to drink it black; go longer if you're adding milk, so the spice flavor carries through.

As a latte:
Brew strong — 2 teaspoons per 6 oz of water, steep for the full 7 minutes. Add steamed or warm milk of choice. Any milk works; coconut milk leans into the spice notes, oat milk keeps it smooth. Sweeten to taste.

Traditional simmer method:
Add 1 teaspoon per cup directly to milk in a small saucepan. Simmer on low for 10 minutes — don't boil. Strain out the leaves. Sweeten if you want. This is the version that gets the most out of the spices. A tea ball works if you'd rather skip the straining.

Iced:
Brew hot and strong with slightly less water than usual. Let it cool, pour over ice. Add cold milk for an iced chai version.
