Big Spoon Roasters released it as a limited batch. The response made it permanent.

Big Spoon Roasters is a small-batch nut butter maker based in Durham, North Carolina. They source Certified Organic, fair-labor-certified cashews from a community of growers in Vietnam — cashews they describe as the best they have come across after sourcing from around the world. The coconut is toasted in-house before blending. The lemon is real. The sea salt is Jacobsen, the flaky kind, not the fine-pour variety.

This one started its life as a seasonal limited batch under the name Lemon Coconut. It sold through. Customers asked when it was coming back, consistently enough that Big Spoon added it to the year-round line in March 2024. The name changed to Lemon Cookie at that point — because Lemon Cookie is a more accurate description of what it actually tastes like. The recipe did not change.

Use it on toast with sliced strawberries, fresh figs, or banana. Swirl it into a yogurt bowl.
