Green Tea: The Delicate One (How to not make it bitter)
Let’s address the elephant in the room: If your green tea tastes like bitter, hot lawn clippings, you aren't bad at making tea—you are just burning it.
Green tea (like Sencha, Jasmine, or Gunpowder) is completely unoxidized and incredibly delicate. To get that light, soothing, slightly sweet flavor, you have to treat it gently. Put down the boiling water, step away from the microwave, and follow these rules to save your cup.
The Zero-Stress Brewing Stats
The Ratio: 1 tsp (≈2 g) of loose tea per 8 oz cup. (Green tea leaves are generally smaller, so a single teaspoon gets the job done.)
The Water: 175°F / 80°C. (Crucial rule: Do not use a rolling boil! See the pro-tip below on how to easily fake this temperature.)
The Time: 1–3 minutes. (Start tasting it at the 60-second mark. Seriously, do not walk away from this one.)
How to Brew It Like a Pro (Without Acting Like One)
The Water Hack: You don't need a fancy thermometer kettle. Just bring your water to a boil, take it off the heat, and let the kettle sit open for about 2 to 3 minutes. This drops the temperature right down to that magic 175°F sweet spot.
The Short Steep: Pour your hot (not boiling!) water over the tea leaves. Set a timer for 1 to 2 minutes. Green tea extracts chlorophyll and tannins very fast, which is what causes that bitter "dry mouth" feeling if left in too long.
Pull the leaves: Remove your infuser at the beep. And say it with us: Do not squeeze the leaves!
How to Serve It
The Purist: Green tea is best enjoyed completely plain so you can actually taste the light, fresh aromatics. No milk required.
The Afternoon Refresher: Brew it double-strength (use 2 tsp of leaves), pour it directly over a glass of ice, and throw in a sprig of fresh mint or a squeeze of citrus.
The "I Forgot About It" Method (Cold Brew): Put 1-2 tsp of leaves in a glass of cold water and stick it in the fridge overnight (6-12 hours). Cold water doesn't pull out any bitterness, resulting in the smoothest iced green tea you will ever drink.
