Ingredients

  • 1½ sticks salted butter, softened
  • 1 cup light brown sugar
  • 2 eggs, at room temp
  • 1 tsp vanilla extract
  • 1½ cups all-purpose flour
  • 2 Tbsp finely ground Death By Chocolate Coffee
  • 1½ cups graham cracker crumbs
  • 1 tsp baking powder
  • 1 cup chocolate chips, divided
  • 1 oz strong brewed Death By Chocolate Coffee
  • ⅔ cup marshmallow creme (or fluff)

Directions

  1. Prep the Pan:
  2. Preheat oven to 350°F. Lightly butter or spray an 8-inch square baking pan. Set aside.
  3. Make Chocolate Coffee Glaze:
  4. In a small bowl, combine ½ cup chocolate chips with 1 oz of hot brewed coffee. Stir until smooth and melted. Set aside to cool.
  5. Mix the Dough:
  6. In a large bowl, beat softened butter and brown sugar for about 2 minutes. Add eggs and vanilla, mix until smooth.
  7. Combine Dry Ingredients:
  8. In a medium bowl, whisk together flour, graham cracker crumbs, baking powder, and ground coffee. Slowly mix into the wet ingredients until fully combined.
  9. Layer the Bars:
  10. Press half the cookie dough into the bottom of the prepared pan (use fingers if sticky). Spread marshmallow creme evenly over the dough. Sprinkle with remaining chocolate chips.
  11. Top & Bake:
  12. Press remaining cookie dough on top (it’s okay if marshmallow peeks through!). Bake 25–30 minutes, until top is golden brown. Remove and cool completely.
  13. Finish & Serve:
  14. Drizzle cooled bars with the chocolate-coffee glaze. Slice into squares or scoop warm with ice cream. Enjoy!
