White Tea: The Fancy (But Forgiving) Stuff

White tea is the least processed, most delicate tea in your cabinet. Because the leaves are just gently picked and sun-withered, it retains a naturally sweet, floral, and incredibly nuanced flavor.

Don't let its "fine tea" reputation intimidate you, though. It is actually quite forgiving to brew, as long as you give the big, fluffy leaves enough room to breathe!

The Zero-Stress Brewing Stats

• The Ratio: 2–3 teaspoons (4–5 g) per 8 oz cup. (Why so much? White tea leaves are huge and fluffy, not tightly rolled. You have to measure with your heart—and a bigger spoon.)
• The Water: 200°F / 93°C. (Hot, but not a raging, angry boil. Let your boiling kettle sit off the heat for about a minute before pouring.)
• The Time: 5–7 minutes. (Because it is so delicately processed, it takes a little longer for the hot water to coax the flavor out of the leaves.)

How to Brew It Like a Pro (Without Acting Like One)

1. Give them space: White tea leaves expand dramatically when wet. Don't cram them into a tiny, cramped mesh ball; use a wide infuser basket or brew them loose in a pot so they can stretch their legs.
2. Warm the mug: Pour a splash of hot tap water into your mug, swirl, and dump. This stops your cold ceramic mug from shocking the tea and keeps it hot longer.
3. The Double-Dip (Re-steeping): These high-quality leaves have a lot to give. Don't throw them out after one cup! Just pour more hot water over the same leaves for a quick 1-2 minutes for a beautiful second cup.

• The Purist (Neat): Drink it exactly as it is. White tea is simply too delicate to fight with heavy milk or cream—if you add milk, it will just taste like warm milk.
