Only the best harvested beans are selected and exposed for three to four months.  It causes the beans to yellow, swell, and practically become neutral in pH. The name Monsoon Malabar is derived from exposure to the monsoon winds of the Malabar coast.  Java Momma’s Indian Monsoon Malabar has a delicious earthy taste that is roasted between medium and dark. Low acidity, little aftertaste; a smooth and delicious but milder flavor.

This process involves careful handling, constant spreading, raking and turning around in regular intervals. The beans absorb moisture and get significantly larger, turning a yellow, almost golden color. Monsooned beans have a thick texture.
