Place all ingredients in a shallow sauce pan. Stir and bring to a low rolling boil. Remove from heat and let steep for 30-45 minutes. Strain and place syrup in a small jar.
To Make Drink:
Take a small paintbrush and paint honey onto the edge of the glass you are using. Pour some Demerara sugar on a small plate and roll the edge of the honey rimmed glass in the Demerara sugar. Fill your glass with ice. Place the remaining items, the chilled Coffee Couture, the Lavender Honey and Fig Infused Syrup and the Creamer into a Shaker. Shake, remove lid and pour over the ice in your glass. Enjoy being fancy!
